餐旅課程內涵的設計不能只有強調專業技能之用,更應融入通識教育之反思與行動,培養具反思及行動能力的專業人才。在透過「海外參訪實習」體驗國外人文藝術之美、學習飲食文化之淵源與瞭解餐旅學校發展概況之際,除了拓展國際視野,學生能否藉此將過去所學的作一反思,實為值得深思之處。是以,本研究以北部某科技大學餐飲管理系的四年級學生與授課教師為研究對象,並透過參訪實習心得之資料蒐集與分析、學生之焦點團體訪談,以及參與課程的教師之深度訪談等研究法,以哲學實踐者之觀點,反思台灣餐旅教育規劃「海外參訪實習」課程之實質成效與析論該課程內涵之優缺點,最後據以提出具體的建議,供餐旅教育界參考。
The content of hospitality curriculum should emphasize not only in the vocational education, but in the liberal education, to nurture future professionals with reflection practices. By the completion of the overseas study tours, hospitality students may enrich the experience of foreign arts and living, learning dietary culture and hospitality education development, however, the main concern should be on whether the students are able to integrate the past knowledge with present experience and practice the reflective ideology. Therefore, this research takes philosophic practitioner's perspective, attempts to analyze the content and evaluate the effects of overseas study tours in Taiwan hospitality education. The research objects are the food and beverage management majored senior students of selected university of science and technology, and the teacher of the course. The qualitative method was applied in this research. Data was collected through in-depth interview, focus group, and student reports of the course. The findings and propositions provide a reference for curriculum development of hospitality management education.
