本文透過文獻探討及專家訪談,發展出烘焙師傅於國際競賽獲獎之關鍵因素準則體系,運用決策實驗法與網路分析程序法確定烘焙師傅於國際競賽獲獎之關鍵因素,而後根據關鍵因素之間的因果關係,結合重要性-績效分析的結果來探討關鍵績效的改善措施。實證研究的結果顯示,「團隊成員」、「專業技能」、「溝通協調」、「國際資訊接軌能力」、「國內外競賽參與的規劃與安排」、「後勤團隊的規劃與安排」、「培訓時程」與「生涯規劃」為關鍵因素,其中「團隊成員」或「國際資訊接軌能力」為提升獲獎機會的源頭,可以有效帶動其他關鍵因素之改善。由於所有關鍵因素均與選手培訓過程有緊密關聯,因此所提出之管理意涵應可促進培訓計劃訂定上之完整性。
This paper uses literature review and expert interviews to identify the criteria of key winning factors of prizes of bakers' international competitions. DEMATEL and ANP process is utilized. According to the causal relationships among the key factors, importance-performance analysis is used to explore the measures of performance improvement. As a result, key factors are team members, professional skills, communication and coordination, capability of integrating international information, competition schedules, logistics team, training process and career planning. In addition, the improvement of team members and the capability of integrating international information make other factors much better. Because all the key factors are closely related to the training process, the proposed management implications can be set on the training plan to promote integrity.
