近年來受到溫室效應、氣候變遷等環境問題的衝擊,使得節能減碳、永續發展等議題成為全球關注的焦點。環境教育受到重視,相對地飲食教育也因「百哩食物」能降低碳的排放、解決食材來源與安全性的問題,而更受到重視。本研究屬探索性研究,檢視大專學生的食物知識與飲食行為間關係。本研究採用問卷調查方式,詢問28位男性及23位女性共51位同學。研究結果顯示,大部分學生對食物知識有較高的成績,但飲食行為的得分卻較低;此外,學生的食物知識(認知或信念)與飲食行為(行為)間相關係數,沒有達到統計上的顯著性,顯示認知與行為不一致的現象。這也表示,目前國內的飲食教育或是環境教育,無法將知識信念成為學生日常生活的一部份,亦無法連結到食物來源與地產地銷的節能減碳、環境保育的觀念。
In recent years, the importance of environmental education has more attention as before. The 100-mile diet concept has reduced carbon emissions and is good for environment. This study is an exploratory research and to introduce the concept to students and test their environment cognitive and behaviour. There are 51 students complete questionnaire, 28 males and 23 females. The results indicate that almost college students hold higher food knowledge but lower eating behaviour. However, the results also show that there are no statistical relevance between "food knowledge" (cognitive or belief of food) and "eating behaviour "(behaviour of food). It means that environmental education or food education must change the current teaching methods and be found in daily life and eating behavior.
