Students in rural areas tend to be less motivated to learn because of their geographical remoteness from metropolitan regions. Economic background, familial factors, and schooling conditions have also added to the constraints on the development of rural education. When it comes to science education, specifically, rural schools are placed in a difficult situation, because of their need for additional assistance and attention from all sectors of society. This study explored rural junior high school students' learning process and learning outcomes during four months of teaching hands-on activities related to the field of aeronautics. A case study was adopted to target 10 students from a rural junior high school in Southern Taiwan. This study designed curricular activities and conducted training with the objective of guiding students' participation in the Hand Launch Glider Flying Competition. Researchers assessed the learning process and learning outcomes using activity observation logs and worksheets. Students were scored on the structures of their concept maps that analyzed changes in these structures and their knowledge of the instructional content. Results showed the application of concept mapping to teaching and knowledge assessment during the guiding activities were conducive to students' construction of flight knowledge. Moreover, students' participation in learning competitions were an effective strategy to improve their learning interest and deepen their understanding of scientific knowledge. Despite many unfavorable conditions, schools in rural areas can still provide appropriate guidance and supporting facilities for exploration activities about flight science.
