常見蔬果植物抗氧化活性之評估

Evalution of antioxidant activity on common vegetable and fruit plants

摘要


本研究之目的乃使用市售常見的7種蔬果植物,以水或95%乙醇萃取,進行其萃取物抗氧化能力及活性之評估。分析項目包括:總酚化合物含量、超氧歧化酶(superoxide dismutase, SOD)活性、清除DPPH(1,1-diphenyl-2-picryl hydrazyl)自由基能力及總抗氧化能力。結果顯示,蔬果植物總酚化合物含量,其值介於12.35-111.96mgGAE/g之間,含量前三高者,分別為薑鮮品凍乾品(乙醇萃)111.96 mg GAE/g,諾麗果實凍乾品(乙醇萃)含66.68 mg GAE/g及山苦瓜(紅)乾燥品(乙醇萃)含65.4 mg GAE/g。SOD活性方面,其活性值範圍為0-51.36 U/mg之間,活性前3高者依序為薑鮮品凍乾品(水萃)51.36 U/mg、山苦瓜(紅)乾燥品(水萃)40.64U/mg及諾麗果實凍乾品(水萃)24.64 U/mg。清除DPPH自由基能力方面,雖然每種樣品清除DPPH自由基能力高低不一,但每種樣品皆呈劑量效應,隨著濃度的增加而提高,清除DPPH自由基能力較佳之前3高者,當濃度為50μg/mL時,依序為薑鮮品凍乾品(乙醇萃)9.83%、秋葵鮮品凍乾品(乙醇萃)3.09%及酪梨鮮品凍乾品(乙醇萃)2.69%。總抗氧化能力方面,每種樣品皆呈劑量效應,隨濃度增加而提高。當濃度為50μg/mL時,清除ABTS^(.+)自由基能力前3高者,依序為山苦瓜(紅)乾燥品(水萃)18.04%、薑鮮品凍乾品(乙醇萃)8.52%及酪梨鮮品凍乾品(水萃)4.59%。由以上結果顯示常見7種蔬果植物雖抗氧化成分及清除自由基能力結果不一,各項蔬果植物萃取物樣品於低濃度下,發現亦有抗氧化效應,因此推測蔬果植物仍具有良好之抗氧化能力。

There were 7 kinds of common vegetable and fruit plants used in this study. The ways of extraction were used water or 95% ethanol, and evaluated the antioxidant capacity and activity of various samples. Analyzing items included total phenolic contents, superoxide dismutase activity (SOD), DPPH radical scavenging activity and total antioxidant capacity. Results indicated that the content of total phenolic compounds in various sample extracts were between 12.35 - 111.96 mg GAE/g. The top three of contents of total phenolic compounds were 111.96 mg GAE/g of fresh freezed Zingiber officinale Roscoe (ethanolic extracts), 66.68 mg GAE/g of fruit freezed Morinda citrifolia Linn. (ethanolic extracts), and 65.4 mg GAE/g of dried Momordica charantia L.(Red) (ethanolic extracts), respectively. The SOD activity of vegetable and fruit plants were 0 - 51.36 U/mg. The top three of SOD activity in all samples were 51.36 U/mg of fresh freezed Zingiber officinale Roscoe(water extracts), 40.64 U/mg of dired Momordica charantia L. (Red)(water extracts), and 24.64 U/mg of fruit freezed Morinda citrifolia Linn.(water extracts), respectively. In DPPH radical scavenging activity, despite the fact that the scavenging activity in each samples extract was different, it still found that all the samples had the dose response and enhanced with increase of concentration. The top three of common vegetable and fruit plants, when the concentration was at 50 μg/mL, the DPPH radical scavenging activity of fresh freezed Zingiber offi cinale Roscoe (ethanolic extracts) was 9.83%, fresh freezed Abelmoschus esculentus L. (ethanolic extracts) was 3.09%, and fresh freezed Persea americana Mill. (ethanolic extracts) was 2.69%. In total antioxidant activity, all the samples showed the dose response and enhanced with increase of concentration. The top three of total antioxidant activity, which had good ABTS^(.+) free radical scavenging activity. When the concentration was at 50 μg/mL, the ABTS^(.+) free radical scavenging activity of dried Momordica charantia L. (Red)(water extracts) was 18.04%, fresh freezed Zingiber officinale Roscoe (ethanolic extracts) was 8.52% and fresh freezed Persea americana Mill. (water extracts) was 4.59%, respectively. From the above results show that the 7 kinds of common vegetable and fruit plants which their antioxidant composition and the ability of scavenge free radicals were different, and that could be found a better antioxidant response with a low concentration. Thus, the study surmised that vegetable and fruit plants still have good antioxidant activity.
