以自動流體分析儀檢測食品中維生素B1之含量

Determination of Vitamin B1 Content in Foods Using a Rapid Flow Analyzer

摘要


維生素B1廣泛存在各種動植物食品中,因分子中含有氮及硫,故亦稱之為硫胺素 (thiamine)。其輔酶參與多項重要能量代謝反應,如丙酮酸之脫羧作用等,當膳食中嚴重缺乏時,易罹患腳氣病 (beriberi),是一重要營養素。化學螢光分析法為常用以檢測食品中維生素B1含量的方法。由於維生素B1於鹼性環境下,氧化產生硫色素(thiochrome)化合物,在紫外光照射下會產生強烈藍色螢光,故專一性佳,加上所使用之儀器設備簡單,耗費成本較低,應用十分廣泛。然其步驟繁複,且耗時良多,而僅能作單點校正,對於分析速度及準確度均有影響。因此,研究發展自動流體 (automated continuous-flow or rapid flow) 分析法,期以加快分析速度,並藉以比較兩種分析方法所測結果之差異性。

Fluorescence method is the usual method for vitamin B1 determination. The vitamin B1 can be oxidized to thiochrome compound, which displays a strong blue fluorescence under violet excitation at alkaline condition. The fluorescence method is with advantages such as high specificity, simple instruments and low cost. On the other hand, the method is time consuming and with lower accuracy due to complicate preparation procedures. An automated rapid flow analysis is developed and described in this paper. Results are compared and discussed by using these two different analytical methods.
