The objective of this research is to study changes of resistant starch content (RSC) of corn starch processed by single-screw extrusion processing and thereafter storage. Specifically in the research, effects of the extrusion processing (feed moisture content, barrel temperature, screw speed) and storage conditions (temperature, time) on the resistant starch content of corn starch extrudate were studied. According to results of the study, increasing the feed moisture content and barrel temperature would significantly (p<0.05) increase the RSC of extrudate. The corn starch, processed by feed moisture content 40%, barrel temperature 140℃, and screw speed 40rpm, had the highest RSC (2.69%). In addition, increasing storage time (14 days) and decreasing storage temperature (4℃) would significantly (p<0.05) increase the RSC of extrudate. In this research, the corn starch processed by feed moisture content 40%, barrel temperature 140℃, and screw speed 20-30rpm, stored at 4℃ for 14 days, had the highest RSC (4.17-4.25%).
