採收時間對葉用甘藷採收後品質之影響

The Effect of Harvest Timing on the Postharvest Quality of Leafy Sweet Potato

摘要


葉用甘藷為近年來廣受消費者喜愛之健康蔬菜,若能在適當時間採收並配合妥善貯藏條件,將有助於延長其食用之品質。本研究利用二不同農藝性狀之葉菜甘藷桃園2號品種及C83L20品系進行試驗,探討採收時間對貯藏期間品質之反應,藉以明瞭對葉用甘藷採收後貯架壽命之影響。葉用甘藷下午採收貯藏較上午採收貯藏有較高之乾物重與可溶性糖含量。水分含量、維生素C含量、葉綠素含量則以上午採收貯藏較下午採收貯藏高,前者黃化程度亦較輕但無顯著差異。採收時之溫度亦影響組織新鮮壽命,若先行預冷處理可提高貯藏品質之效果。葉用甘藷貯藏一週後,以上午採收包裝處理低溫(5℃、10℃)貯藏之水分含量、乾物重、維生素C含量、碳水化合物含量與色澤表現皆較下午採收後經相同處理者佳。

Recently leafy sweet potato is becoming a popular healthy vegetable in Taiwan. With proper harvest timing and storage method, vegetable quality may be ensured for a longer time. Thus, it is the major objective of this study to evaluate the effect of harvest timing on the postharvest quality of leafy sweet potatoes, cultivar Taoyuan No. 2 and line C83L20. Plants were harvested at various timings and were stored for varied durations. A number of agronomic features were investigated so that postharvest quality can be determined and effect to the shelf-life can be evaluated. Results indicated that leafy sweet potatoes harvested in the afternoon had higher dry weight and soluble sugar content than those harvested in the morning. Conversely, the levels of water content, vitamin C and chlorophyll were higher in leafy sweet potatoes harvested in the morning and then stored. The leafy sweet potatoes harvested in the afternoon showed more serious yellowing on leaves than those harvested in the morning. In that case, temperature magnitude at harvest had significant effects on the shelf-life of leafy sweet potatoes. Results also indicated that pre-cooling treatment enhanced the quality of leafy sweet potatoes during the storage. After one week of storage, water content, dry weight, vitamin C, and carbohydrate content of leafy sweet potato harvested in the morning and stored under 5-10℃ range were higher than those harvested in the afternoon. The former also had better appearance than the latter.
