Qimin yaoshu 齊民要術 (Important arts for the people's welfare) is not only an important book about agricultural technology but also a milestone in the history of dietary culture. It records all kinds of techniques and materials used in food processing, especially the processing of meat. This article discusses and analyses meat processing techniques described in the book. It presents the general condition of meat processing and meat products in the Wei-Jin period. It also points out some meat processing techniques which are still feasible at the present time.
