無國界料理廚藝創作及服務人才培育之研究

Research on Culinary Creation and Service Talent Cultivation

摘要


為增加大專生之職場競爭力使其能順利與職場接軌,透過執行勞動部就業學程計畫提昇大專生之就業知識、技能、職場倫理以協助大專生提高職涯規劃能力。計畫針對無國界料理廚藝創作及餐飲服務所需之專業實務能力,推動理論與實務並重、實習與就業媒合導向之各類課程與活動,以強化參與學生之多元化餐飲相關產業的就業競爭力。無國界料理廚藝創作及服務人才培育之研究計畫以整合知識與就業技能為目標,將「無國界餐點廚藝創作」、「無國界烘焙點心廚藝創作」、與「餐飲衛生安全管理」等三大重點列為教學核心,系統化統整無國界餐飲管理與廚藝創作等相關知識。將規劃業界實習,學員透過實務上的理論、教學情境的演練,再加上實際的業界實習使學員畢業後更能順利與職場接軌。因此,本研究將針對敏實科技大學餐飲系執行「無國界料理廚藝創作及服務」之人才培育之研究,說明執行方式與執行成效,以提供他校研發與執行就業學程之參考。

For the improvement of workplace competitiveness to college students and help them smoothly integrate with the workplace. The employment knowledge, skills, and workplace ethics of college students can be improving by implementing the employment program of the Ministry of Labor to help college students enhance their career planning capabilities. The plan aims at the professional and practical skills required for the creation of cuisine without borders and catering services. Also, promotes various courses and activities that emphasize both theory and practice, internship and employment match-oriented, to strengthen the participating students in diversified catering-related industries employment of competitiveness. The goal of this course is to integrate knowledge and employment skills, which is focus on the three major points, which are "Creation of Meal Cooking without Borders", "Creation of Baking Dim Sum without Borders", and "Food Hygiene and Safety Management" have listed as the core of the teaching system. Integration of borderless catering management and culinary creation and other related knowledge. This course will plan industry internships. Trainees can practice theoretical and teaching situations in practice, coupled with actual industry internships so that students can better integrate with the workplace after graduation. Therefore, this research will focus on the research and development of "Culinary Creation and Service without Borders" carried out by Minth University of Science and Technology, explain the implementation methods and implementation results, and provide references for other schools' research and development and implementation of employment programs.
