從食物料理的文學敘述到餐盤上的地景藝術

From the Literary Narratives of Cuisines to Landscape Art on Plates

摘要


對於文本跨域再創作,探索「文本」的多重向度空間,思考「文本」的建構、解構和轉喻,及「跨媒介敘事性」的運用。擬提出課程設計的新嘗試,將「中華廚藝」結合「空間地景」,就文學的闡發,文本從文字到圖像到實景。「景」從文句義的敘述,轉成圖景的彩繪,轉成食材創作的產出。由時空薈萃的人文地景,置換到餐盤食藝佈置,「景」在天地,「景」也在餐盤。餐盤裡「食」景觀,如此對「物」的新詮釋,將文學、飲食、藝術、建景等多元整合,餐盤食材的地景,形佈文化意境的特殊構型,加入風物與情感、歷史與現實,展現東方美學朗朗乾坤宇宙,可於一小方天地,從吃食餐盤的地域風情裡看見。

In terms of the cross-domain re-creation of texts, this paper explores the multidimensional spaces of "texts," while reflecting on the construction, deconstruction, and metonymy of "texts" and application of "cross-media narratives." This paper proposes a new attempt at course design - combining "Chinese culinary arts" with "spatial landscape." Based on the elucidation of literary narratives, from textual descriptions to images, and then to actual landscapes, texts describing landscapes are converted into paintings of the landscapes and cuisine creations. The cultural landscapes of time and space are converted into the art of plate garnishing. As a result, "landscapes" exist in heaven and earth, as well as on the plates. Metonymy is achieved through "landscapes," and the metonymy of food ingredients is put into practice on the plates. The landscapes of "food" on the plates are new interpretations of "objects" that integrate literature, cuisines, art, and architectural landscapes to present a regional "corner" in the mobile age of globalization and reflect regional features without being marginalized. The special configurations of landscapes associated with the food ingredients on the plates convey cultural meaning, reflecting cultural scenery and affection, as well as history and reality. This work displays the cosmos of oriental aesthetics through the regional features of specific areas shown on plates of cuisine.
