新冠肺炎疫情前後台灣餐飲業消費付費模式比較

Comparison of Catering Consumption Patterns in Tainan City Before and After the Covid 19 Epidemic

摘要


受到新冠肺炎疫情的衝擊,在股巿、各行各業營收等各方面的經濟表現皆受到影響營業額下滑,首當其衝的應屬餐飲業的營收。與此同時,Ubereats、Foodpanda等餐飲平台卻異軍突起,2022年年產值突破新台幣300億元。另外,根據經濟部統計處的調查,有提供外送、外帶、或與餐飲平台合作的餐飲業,在疫情期間營業額下滑的幅度遠比未提供外送、外帶、或與餐飲平台合作的餐飲業來得少。顯示,在疫情的衝擊下,消費者的飲食消費模式已因應產生改變。本研究目的即在於比較在新冠肺炎疫情前後消費者餐飲消費模式是否產生變化,以提供在各國各城巿,在疫情過後紛紛開放觀光,預計營運將有另一波榮景的餐飲、旅宿業者在提供餐飲服務、訂購、付費方式設計之參考,以充份做好準備迎接餐飲業的榮景。本文以台灣內需型產業餐飲業作為分析對象,調查分析歷年來台灣餐飲業的營業額、消費年齡、付款模式,以瞭解不同年齡層等不同人口統計變項偏好的付款模式、餐飲消費模式,並預測2023年的餐飲業產值,以提供在餐飲業者在後疫情時代,規劃提供餐飲服務、訂購、付費方式設計之參考,以符合消費需求提升營業額。

Affected by the COVID-19 epidemic, economic performance in various aspects such as the stock market and the revenue of various industries has been affected. The revenue has declined, and the revenue of the catering industry should bear the brunt. At the same time, catering platforms such as Ubereats and Foodpanda have sprung up, and their annual output value will exceed NT$30 billion in 2022. In addition, according to the survey by the Statistics Office of the Ministry of Economic Affairs, the catering industry that provides delivery, take-out, or cooperates with catering platforms those decline of revenue was smaller than that of catering that does not provide delivery, take-out, or cooperates with catering platforms. It shows that under the impact of the epidemic, consumers' dietary consumption patterns have changed accordingly. The purpose of this study is to compare whether consumers’ food and beverage consumption patterns have changed before and after the COVID-19 epidemic, so as to provide information on the catering and hotel industry operators that are expected to have another wave of prosperity after the epidemic in various countries and cities. Provide references for the design of catering services, ordering, and payment methods, so as to fully prepare for the prosperity of the catering industry. This article takes catering industry in Taiwan as the analysis object, and investigates and analyzes the output value, dining methods, consumption age, and payment mode of catering industry in Taiwan over the years, so as to understand the payment mode and catering consumption mode of different genders and age preferences. , and predict the output value of the catering industry in 2023, so as to provide reference for the design of catering services, ordering, and payment methods for catering operators in the post-epidemic era, so as to meet consumer demand and increase turnover.
