本研究目的:旨在探討Health Matters健康促進方案之介入是否能改變高職智能障礙學生的飲食認知、飲食態度及飲食行為,透過研究結果提升高職智能障礙學生正向的飲食行為。本研究方法:採準實驗設計,研究對象為特殊學校共計32名高職智能障礙學生,將學生分成19名實驗組及13名控制組進行前後測;扣除前後測,實驗組進行12週,每週一節,每節45分鐘,共12節Health Matters健康促進方案課程;控制組僅參與一般課程。本研究工具參考Health Matters原始架構與課程內容所設計之量表,內容包含飲食行為、飲食態度、飲食認知等三個部分。研究結果:發現實驗組在經過12週Health Matters健康促進計劃介入後,在飲食認知、飲食態度、飲食行為上有明顯進步並達顯著效果,且三者之間有正相關。故從研究結果可得知結論:Health Matters健康促進方案能幫助提升並改善高職智能障礙學生之飲食認知、飲食態度、飲食行為。最後根據本研究結果與建議提供後續實踐研究可進行之方向。
The purpose of this study was to investigate the effects of Health Matters Health Promotion Program on the dietary knowledge, dietary attitudes, and eating behaviors of the students with intellectual disabilities in vocational colleges. Participants included 32 intellectual disabilities students from special education school, which consisted of an experimental group (EG, n=19) and a control group (CG, n =13). In this quasi-experimental design, EG completed a 12 weeks Health Matters Health Promotion Program courses (45 minutes/week), while CG only participated in the regular school curriculum. Both groups completed the Eating Behavior Scale, Eating Attitude Scale, and Dietary knowledge Scale developed by Marks before and after the experiment. The results were as follows: (1) After 12 weeks of intervention in Health Matters Health Promotion Program, the EG showed significant improvement in dietary knowledge, dietary attitudes, and eating behaviors. (2) There was a positive correlation among dietary knowledge, dietary attitudes, and eating behaviors. Overall, the result shows that the Health Matters Health Promotion Program can help students with intellectual disabilities to improve their dietary knowledge, dietary attitudes, and dietary behaviors. We suggest that future studies of Health Matters Health Promotion Program should focus on the positive effects on adapted physical education.
