近年來,部分業者開始推出以親子互動為主題的餐廳(簡稱;親子餐廳),該餐廳不但結合多元且友善的親子活動場域,更有專為兒童設計的餐點。本研究主要探討親子餐廳經營關鍵成功因素,因此本研究針對幼兒教育的相關人士,從不同的角度討論親子餐廳的經營指標。本研究採取模糊德菲法(fuzzy Delphi technique, FDT)及層級分析法(analytic hierarchy process, AHP)來分析親子餐廳經營指標,研究結果發現在環境空間規劃、親子餐點供應,以及家長用餐需求係為親子餐廳經營主要核心指標,因此本研究建議親子餐廳經營應著重在餐廳環境與餐點健康等層面。
In recent years, the partial food suppliers launched into a new niche market- parent-child restaurant. This new restaurant style did not only have multivariant and friendly area, but also provided child foods. Therefore, the purpose of this study was constructing indicators of parentchild restaurants. This study applied fuzzy Delphi technique, FDT and analytic hierarchy process, AHP to analyze assessment model of parent-child restaurants in Taiwan. The results finds that experts from different fields have individual preferred indicators, however, the empirical study indicates that environmental spatial planning is the most important criterion considered in overall experts. The analysis of this investigation suggests that the parent-child restaurants must evaluate environmental spatial planning first.
