Evidence Based of Brainwave and Heart Rate Variability for the Leisure Benefits of the Processes of Traditional Brewing Tea

摘要


Tea is a popular drink all over the world. Tea culture can be defined as the species of tea, the way of brewing tea and leisurely tea drinking, by the way the enjoy and relax atmosphere surrounding tea drinking. Our hypothesis is that the way of brewing tea potentially induced the atmosphere of enjoy and relax on psychologically and physiologically. To investigate the hypothesis and characterize the degree of enjoy and relax, the brainwaves, heart rate variability and activities of sympathetic and parasympathetic functions were applied for additional quantification. This study has ethically approval by the human research ethics committee of National Cheng Kung University, Tainan, Taiwan. The undergraduate students were recruited and divided into two groups of non-well trained and well-trained groups of traditional brewing tea volunteer. The experimental results demonstrated that the well-trained group reduce systolic blood pressure, heart rate, sympathetic nerve activity and high β wave, and increase overall heart rate variability, parasympathetic nerve activity and low α wave, which suggested that the well-trained tea brewing activity could help in physiological relaxation and reduction of mental tension. Our original finding revealed that the leisure benefits of the tea brewing activity has proved by the measurement and analysis of the activities of brainwave and heart rate variability. Based on the education point of view, design an in-depth teaching program for the brewing tea and the specialization of recreation could further assist the industry of tea culture tourism.

研究目的有:1.測量泡茶歷程的生理數據;2.以腦波、心律變異數據證明泡茶活動具備休閒效益。研究方法:採用準實驗研究(quasi-experimental study)的前、後測設計(pretest-posttest designs),對12位熟練「小壺茶法」的國立澎湖科技大學觀光休閒學系學生進行研究。設計三種實驗項目,控制組為茶席靜坐20分鐘、實驗組則根據陸羽茶藝師小壺茶法檢定程序操作,設計二組:奉茶前獨自展演、演譯完整泡茶與奉茶程序,實驗組與控制組皆進行20分鐘。研究結果發現:小壺茶法可降低收縮壓、心跳速率、交感神經活性及High β波,提高整體心率變異度、副交感神經活性及Low α波,證明泡茶活動有助生理上的放鬆與降低心理緊張程度。本文獨創性首先使用腦波儀,量測泡茶活動的腦波變化,證明泡茶活動的休閒效益。研究意義彌補泡茶師深度休閒與遊憩專門化的研究缺口,進而協助茶文化觀光產業以泡茶作為遊程設計或規劃泡茶體驗活動的高端茶旅遊。
