台灣在地飲食的全球化分析:從珍珠奶茶對大學生的意涵談起

Research on Local Food Globalization in Taiwan: The Meaning of Pearl Milk Tea among College Students

摘要


外國人口中的QQ milk tea,pearl milk tea,Bubble tea是粉圓和奶茶的混合飲料,看似不同軌的兩條食物平行線,卻在台灣人的創意結合當中,透過麥當勞黃金拱門全球市場兼容在地的經營方式,將珍珠奶茶帶出台灣,回饋全球,重新詮釋了台灣茶的文化的發展,同時賦予傳統台灣茶文化新的生命。對此,本研究針對大學生進行半結構式問卷調查,探討珍珠奶茶作為在地飲食全球化代表的意涵。其研究發現:1.結合東西方文化:喝出多元文化性格與文化饗宴。2.茶文化的創新:喝出東方茶文化的味道。3.全球化的文化動力:喝出台灣的認同感。

QQ Milk Tea, Pearl Tea, or Bubble Tea, as what foreigners called them, is one kind of beverage mixed with tapioca and milk tea. While pearl tea and milk tea look enormously different, out of Taiwan people's novel ways to combine them and the usage of golden arches, Taiwan successfully redefines Taiwan tea culture, and brings pearl milk tea to the whole world. This research conducted a questionnaire survey on students in the university and tried to discuss the implication that the way how pearl milk tea implies local food globalization. The results of the content analysis from open-ended questions were as below: 1. Combining Eastern and Western cultures: Pearl milk tea can be considered as the representation of culture diversity and culture feast. 2. Innovation of tea culture: The Eastern tea culture can be tasted in drinking Pearl milk tea. 3. Cultural power of globalization: Identification of Taiwan will be enhanced through drinking pearl milk tea.
