金門高粱酒款之比較性研究

A Comparative Study on the Types of Kinmen Kaoliang Liquor

摘要


金門酒廠實業股份有限公司,每年為金門縣政府挹注40%財政收入,被視為金門的金雞母,為金門縣府最大財政支持者。依據吳秋穆(2012)的《金門高粱酒鑑賞年鑑》,從1950至2010年提供百餘種酒款,將採「貝瑞岱比較教育研究法」來對酒款從事比較性研究。研究發現:第一酒款的比較研究發現,(一)特級高粱酒始於1962年民國51年,依容量不同,出了九款不一樣的特級高粱酒,酒精濃度以58%為主。(二)國慶酒始於1975年民國64年,分別在12個不同年份生產,容量以600ml與500ml為主,酒精濃度有58%、68%、56%三種。(三)三節配酒始於1982年民國71年春節,春節配酒是三節當中配銷最多的配酒分別在14個不同年份生產,容量以750ml、600ml與500ml三種為主,酒精濃度以58%為主。(四)總統就職紀念酒始於第六任蔣總統經國先生,在60年間發行五任總統紀念酒,容量以500ml、600ml、750ml三種為主,且酒精濃度一致為58%。(五)八二三砲戰紀念酒始於1978年,分別在7個不同年份生產,容量以600ml、500ml與1000ml三種為主,酒精濃度以50%、58%與68%三種。(六)大麯酒始於1960年,有11種酒款,酒精濃度最高為68%、最低56%,容量最重有5公升、最輕100ml。第二,酒款與年代比較研究發現,從1950年至2010年,金門酒廠共生產出「197款酒」其中1980年代生產76款酒最高。第三,酒款與容量比較研究發現,在「197款酒」中產生11種不同容量,600ml有73款酒最高。第四,在11種不同酒精濃度與酒款比較當中,葡萄酒濃度最低僅10%、僅生產2款,濃度最高為大麯酒68%、生產22款。

Each year, the revenue of Kinmen Kaoliang Liquor Inc. accounts for 40% of the revenue of the Kinmen County Government. The company is not only a cash cow but also the county's largest financial supporter. According to the Kinmen Kaoliang Liquor Annual, authored by Qiumu Wu (2012), more than 100 types of liquor were offered between the year 1950 and 2010. This study adopted Bereday's Comparative Method in Education to conduct a comparative study on liquor types. Firstly, a comparative study showed that (1) premium Kaoliang Liquor was first launched in 1962 (ROC 51), and nine different premium Kaoliang Liquors of mainly 58% alcohol content with different volumes were available on the market. (2) National Day liquor was first launched in 1975 (ROC 64) and these liquors were produced in 12 different years. The volumes were mainly 600mL and 500 mL, with alcohol contents of 58%, 68%, and 56%. (3) Holiday limited editions were launched beginning from the Chinese New Year of 1982 (ROC 71). Chinese New Year editions were the best seller of the limited editions and were produced in 14 different years. The volumes were mostly 750mL, 600mL, and 500mL, and the alcohol content was mainly 58%. (4) The Presidential Inauguration edition was launched beginning with the sixth president, Chiang Ching-Kuo, and a total of five presidential editions were released in a 60-year period. (5) The Second Taiwan Strait Crisis commemorative liquor was launched in 1978 and was produced in seven different years. The volumes were mainly 600mL, 500mL, and 1000mL, and alcohol contents were 50%, 58%, and 68%. (6) Fermented grain liquor was launched in 1960, and there were 11 types in total, with alcohol content ranging from 56% to 68%. The largest volume was 5 liters and the smallest volume was 100mL. Secondly, a comparative study on the liquor types and years showed that between 1950 and 2010, Kinmen Kaoliang Liquor Inc. produced 197 types of liquors, and the highest production was in 1980 with 76 types. Thirdly, a comparative study on liquor type and volume revealed that there were 11 different volumes to the 197 types of liquors, with 600mL being the most common for 73 types. Fourthly, of the 11 types of alcohol content, the lowest alcohol content was of wine at mere 10%, with two types made; while, the highest alcohol content was in fermented grain liquor at 68% and 22 types were produced.
