巨峰葡萄品質分級之可行性研究

A Preliminary Study on the Quality Grading of Kyoho Grape

摘要


本研究主要目的在探討巨峰葡萄品質分級之可行性。供試葡萄分別取自本省巨峰葡萄主要產地大村、東勢、卓蘭、新社、信義等地,每地各隨機抽取50穗,總計250穗葡萄作為供試樣本。主要分為品質化驗及官能測定兩種。品質化驗項目包括色澤、粒徑、粒重、硬度、糖度、酸度及糖酸比;官能測定項目包括外觀及食味官能測定兩種。研究結果顯示,不論是經由葡萄品質化驗法或官能測定法,已能明顯分出巨峰葡萄品質的優劣。站在品質分級的觀點而言,本研究認為巨峰葡萄色澤、粒徑(或粒重)、硬度、糖度及糖酸比等指標,都可以做為葡萄品質分級標準的指標,若再結合外觀及食味官能測定,即能建立一個完善的巨峰葡萄品質分級制度,只是葡萄品質和官能測定的評分比例各佔多少,仍待進一步研究。

This is a preliminary study trying to find the quality grading of Kyoho grape based on the result of testing quality and taste panel test. The testing quality items including color, size, weight, hardness, sweetness, acidity and sweet/sour ratio. The taste panel testing items including fruit appearance and eating quality.A total of 250 samples were collected from Tatsuen, Tungshih, Cholan, Hsinshe and Hsinyi by randomly drawn grape samples in the summer production of 1988. Results indicated that the testing quality and taste panel test can be classified into good, fair and poor groups of Kyoho grape quality, and the testing quality item as color, size (or weight), hardness, sweetness and sweet/sour ratio, etc. can be used as the best indicator of Kyoho grape quality. Nevertheless, the method of Kyoho grape grading presented in this study seems to be applicable, but the quality of ratio between testing quality and taste panel test to set up the grading system of Kyoho grape should be further studied.
