稻米理化性質之研究II.稻米理化性質在不同栽培季節間之變異

Studies on the Physico Chemical Properties of Rice II. The Effect of Cultural Seasons on the Physico Chemical Properties of Rice

摘要


利用臺南5號、臺中189號、臺中秈3號等11個水稻品種為材料,於1984年二期作起,至1986年一期作,種植於臺中區農業改良場之試驗田,探討11種稻米理化性質在不同栽培季節間之變異,結果發現:稻米品質除受品種影響外,尚因栽培季節之不同而異,且各性狀之變化趨勢不盡相同。一般而言,二期作白米之心白、腹白及背白比一期作少,透明度較佳。二期作之直鏈澱粉含量、粗蛋白質含量、鹼性擴散程度及凝膠展延性比一期作高。進一步利用迴歸分析法,分析各季節生產稻米品質之穩定性,發現稻米品質在季節穩定性的高低因品種及品質性狀而異。就性狀間安定性的相互關係而言,直鏈澱粉含量、鹼性擴散度及凝膠展延性之穩定性,可能受同一調節系統的控制,但此一調節體系與其他稻米理化性狀之穩定性間並無相承關係存在。

Eleven rice varieties were planted fro four crops from second crop of 1984 to first crop of 1986 at Taichung DAIS in order to investigate seasonal stability of physico-chemical properties of rice. In general, the qualities of rice are influenced greatly by varieties and cultural practices. The results of this experiment indicated that the rice of second crop showed better grain appearance than the rice of first crop. The rice from second crop was also higher in amylose content, crude protein content, alkali spreading value and gel consistency than those from first second crop. The regression analysis was made to estimate the seasonal stability of physico-chemical properties of rice. Regarding the relationship of stability among characters, it was assessed that the stability of amylose content, alkali spreacing and gel consistency might be controlled by a regulation system which is independent to the stability of other physico-chemical characters.
