豆類蔬菜產業之現況與展望

Current Status and Prospects of Leguminous Vegetables Industry in Taiwan

摘要


台灣豆類蔬菜包括豌豆、菜豆、豇豆、毛豆、萊豆、鵲豆、刀豆、翼豆及蠶豆等種類,其中以豌豆、菜豆、豇豆及毛豆之栽培較為普遍。近年來由於外銷事業之萎縮及農村勞力之缺乏等因素,導致豌豆及菜豆之栽培面積逐漸減少。惟大部份豆類蔬菜為本省夏季重要之菜源,又其在輪作栽培制度中扮演重要角色,因此在蔬菜作物中,仍不失其重要性。本文述及台灣豌豆、菜豆及豇豆等主要豆類蔬菜之生產現況、栽培所面臨的問題以及未來的展望,以供有關人員參考。

Several leguminous vegetables cultivated in Taiwan include pea, kidney bean, asparagus bean, vegetable soybean, hyacinth bean, sword bean, winged bean and soybean are the most popular species grown by farmers. The shrinkage of export and recent years. In Taiwan, however, leguminous vegetables still play an important role in summer season and in rotation system of the crops. Pea, kidney bean and asparagus in cultivation as well as future perspectives are discussed.
