健康飲食的媒體建構:從營養、安全到環境永續

The Media Construction of Healthy Diet: From Nutrition, Safety to Environmental Sustainability

摘要


媒體是大眾健康與飲食重要的資訊來源,例如,美食、營養與食譜訊息等。媒體可能形塑大眾健康飲食的認知,也反映社會共享的健康飲食觀。本研究探討媒體建構的健康飲食相關論述與樣貌。分析樣本為《康健雜誌》網站2012與2013年所刊載飲食相關的71則報導。研究結果發現媒體建構的健康飲食,主要承襲了中西醫學觀點,強調個人身體管理的責任,但也在反思「良」食危機的影響下,開拓出「飲食自主」、「回歸自然」的健康飲食觀點,並延伸至對自然生態的關懷。媒體建構的新健康飲食型態,不僅追求營養、安全,同時也擴展到注重食物生產環境。本研究僅以《康健雜誌》為分析樣本,研究結果的推論受限。建議未來研究可以比較不同媒介的健康飲食建構。

To the public, mass media is the major source of health and dietary information, ranging from information on gourmet restaurants, nutrition guide and recipes. Mass media may shape people's knowledge of healthy diet and may reflect the shared view of it. Thus, it is meaningful to explore the media construction of healthy diet. This study analyzed 71 diet-related news coverage published on Common Health Magazine's website from 2012 to 2013. The results indicate that media construction of healthy diet inherited the Chinese and Western Medicine views which emphasize the individual responsibility for physical management. However, influenced by recent food safety episodes, the media has been developing a set of perspectives on healthy diet, including "diet autonomy," "return to nature," and a concern for ecology. In conclusion, the latest media construction of healthy diet not only pursues nutrition and safety, but also pays attention to food production environment. Although this study analyzed Common Health Magazine, the largest health magazine in Taiwan, its findings may not be applicable to other media. It is suggested that future research explores construction of healthy diet among various media.
