摘要


葡萄糖、蔗糖及澱粉水溶波,受X光線照射之效果加以研究,試驗結果如下;葡萄糖、蔗糖及澱粉水溶液受放射線後,發生酸度,顯示有酸類之生成;由葡萄糖則可生成葡萄糖醛酸;蔗糖及澱粉之酸度係基於其他酸額之產生或高分子鏈上之氧化。葡萄糖水溶液中,酸之產生與溶質濃度無闕,表示放射線作用基於間接效果。酸之產生與線量率亦無闕,然與總線量成正比例。葡萄糖水溶液,受放射線照射後,還原力逐漸消失,反之,蔗糖及澱粉即發生還原力。澱粉水溶液經受放射線後,其碘化澱粉反應,生起變化,可由溶液之分光吸收證明澱粉分子之崩壞。由濾紅色層分析,得知在蔗糖及澱粉同時發生水解反應。基於上述各試驗結果,推知如澱粉等天然高分子物質水溶液如受放射線照射,即起兩大作用,一為氧化,一為分解。

Study has been given to the effects of ionizing radiation with X-rayon glucose, sucrose, and amylose aqueous solutions. It has been observed that acids are formed when these carbohydrates are irradiated. The quantity of acid produced was independent of the concentration of sugars, indicating indirect action, and was independent of the intensity of X-ray either. Reducing power of glucose solution was decreased as measured by copper reduction but, in both sucrose and amylose solution, there was observed a production of reducing power. It has been shown, in paper-chromatograghy, that glucouronic acid in glucose solution, glucose and fractose in sucrose solution and maltose and glucose in amylose solution were produced respectively. Visible absorption peak of iodine complex of irradiated amylose solution shifts to shorter wavelength which is indicative of degradation. The action of the radiation on water soluble natural polymers, such as amylose, includes both oxidation and hydrolytic scission.
