關於餐旅教育的價值以及其教學內容,長期以來就受到很大的爭議。爭議的焦點主要是針對擁有餐旅相關學歷背景是否會對晉升餐旅管用階級工作有直接幫助,或是從基層學起做起對成為管理工作人員反而較有幫助。基於這樣的背景,這個研究藉由調查來了解國際觀光飯店管理人員的職業背景與其勝任管理工作所需的管理和技術,研究他們勝任能力的培養是否與有餐旅學歷背景有關連。這個研究有三個目標:首先是概述國際觀光飯店管理人員的職業背景;其次是歸納國際觀光飯店管理人員的成功因素;最後是將研究參與之經理人員對台灣餐旅教育未來課程發展的建議來說明。主要的研究方法是深度訪談與觀察法。研究結果發現擁有餐旅相關學歷背景不會對晉升管理階級工作有直接幫助,國際觀光飯店管理人員的成功因素除了管理和技術外,個人特質與是否有自我學習能力以及工作熱忱等等,都會影響他們在工作上的表現,餐旅教師應就學生特質,對適合發展的旅館管理工作,做適當且實際的規劃。在教法上,應更創新,以培養學生自我學習能力以及工作熱忱。
This study investigates the direction of future hospitality curriculum development in relation to the career paths of a group of hotel managers from an internationally known full service hotel in Taiwan. The data were collected from in-depth personal interviews and 3-month on site observation. The findings profile the hotel managers' career background and present the merits which make positive impacts on their managerial career development. Hotel managers' viewpoints about the curriculum development of future hospitality management education in Taiwan are also presented. This study concludes that gaining a hospitality education is not necessarily a preferred route to hotel management jobs. To work from an unskilled manual job up through the ranks to reach a management position is also not desirable option. Education and training are important but they should stimulate students' interests and modify students' characters in addition to reinforcing students' skills and knowledge. To be a hotel manager, one should be able to demonstrate his/her strong interest in working in the hotel industry as well as in exhibiting distinctive personal quality. Based on this study, educators are encouraged to be more attentive to students' interests and personal quality development and they should include these elements in the curriculum design in the future. In addition, foreign language skills and understandings of various cultures are also vital for students to pursue managerial careers in the international hotel industry in Taiwan.
