No Feast Without Ducks: How was Nanjing Called "Capital of Duck-Cuisine" ?

摘要


「鴨餚」之於南京不僅歷史悠久、風味獨特,而且花樣繁多、消費量驚人,因而很早就贏得了「鴨都」和「金陵鴨饌甲天下」的美譽。文章首先論述了南京作為中國「鴨都」的由來,接著分析了造就「鴨都」的自然、技術、經濟與社會等諸多因素。今天,在南京向國際性大都市目標邁進的過程中,「鴨都」作為南京城市文化的標誌性符號進一步發揚光大,向世人展示著她獨特的魅力。

Duck-cuisine in Nanjing has been well-known in the history. It has not only numerous ways of preparation, the annual consumption is also huge in quantity. The present paper firstly gives a brief description of the origination of Nanjing as "the capital of duck-cuisine", then makes an in-depth analysis of the natural, technological, economic and social factors related to the development. Nowadays, Nanjing is pacing toward an international metropolitan city. And as a symbolic code of the metropolitan culture, "the capital of duck-cuisine" is giving an exhibition of its peculiar attraction to all the people from the world.
