Comparative histories of soybeans and soyfoods in the U. S. A. and in Asia capture some of the important differences between the United States and the Asian nations. This paper explores the early history of soybeans in Asia, then takes up the development of their uses in the U.S. in the 19th and 20th centuries, and up to the present situation. North American uses of soybeans throw light on the meaning of modernity, and on the way that the world food system has evolved in recent decades. Unlike the past, when colonial rule radically altered the agarian economies of the colonies, today substantial changes in the food systems of sovereign countries are effectuated by the workings of external forces.
