台灣成為WTO以後,酒類專賣制度解除,農村釀酒業即將興起。熱帶水果蒸餾酒即將成為台灣小規模製酒業的一個特色產品。由於規模較小且原料與產品的多樣性,因而需要發展一個容易調整與控制的蒸餾器。結合圖控軟體Labview與訊號擷取卡,做溫度量測與加熱控制,並進行酒精蒸餾試驗。由實驗發現控制塔頂凝結溫度可以容易而有效的控制蒸餾液的酒精濃度。研究中應用ChemCad軟體進行批次蒸餾模擬,模擬蒸餾過程中酒精與其他酒醪中的成份變化並進行蒸餾模擬,探討批次蒸餾不同操作參數對蒸餾液的影響。此研究將來可以用於改善填充塔蒸餾器的操作條件,以製造更佳品質的水果蒸餾酒。
Production of alcohol beverages will become an important farm business in the coming years after Taiwan became member of WTO. Brandy made from tropical fruits will be one of the major prominence products. To design a still for the purpose is a key of success for the newborn industry. In this study a pack column still was designed and studied experimentally, graphic control software Labview was used to control condensation temperature. Alcohol concentration in the distillate could thus be controlled easily. ChemCad software was used to simulate alcohol production as well as changes of other trace compounds during distillation. The software could be used in further studies to find optimal operating conditions for the still to produce better quality brandy.
