摘要

臺灣飲食文學的研究至今最主要的三個尚未解決的問題在於：定義的混亂、分類的紛雜以及發展分期的界定等。
　　在「定義的混亂」的問題上，本論文試圖提出一個客觀的標準來建立討論的平台，提出其應該飲食應該要具備的四大要素：1.基模性形構2.題材3.內容4.意象性形構，釐清書寫、文獻、文學三者的關係。
　　在「分類的紛雜」方面，本論文採以文體學的理論主張，將文體設定在1980至2011年間的現代散文，選擇出當中以飲食做為書寫題材的文本，以次建立散文的次類，再透過文本整體的意象性形構進行書寫類型的分類，將飲食文學分為：「掌故的滋味」、「歲月的滋味」、「美感的滋味」、「地方的滋味」、「遊歷的滋味」、「權力的滋味」等臺灣飲食文學的形構類型，探討不同典型的飲食散文書寫樣態。
　　最後在「發展分期」上本論文分成五期：1949—1980年「飲食文學的醞釀期：懷鄉書寫」、1981—1989年「飲食文學的萌芽期：從懷鄉到在地品味、1990—1999年「飲食文學的確立期：各類體形構的發展」、2000—2003年「飲食文學的轉向:飲食文學中的文化體察」、2003—至今「飲食文學的融和期：各類體形構高度的混融」。探討1980年以來臺灣飲食散文書寫現象，逐步探尋飲食文學從形成、發展到新變之間的不同特質。
　　從飲食文學的研究中所帶來的省思，其實也就是在現代散文研究上的價值性，隨著主題文類的研究經驗能夠被借用到其他文類的研究上，有助於其他主題書寫的研究，也能夠進一步的更加釐清跨文類現象，給予這樣的跨類現象更開放、更包容的對待方式。最重要的是能夠尋著研究軌跡，探討出時代因素如何滲入文本的重要意義。

This thesis examines the evolution of “Dietary Literature” of the Taiwan modern Literature during 1980—2011. There are three questions about “Dietary Literature” in Taiwan: definition, classification and systematization.
　　First, What is the basis of the”Dietary Literature” in Taiwan? My point of view from the philology (the Traditional Chinese diet culture document and literature) which is about the definition of” Dietary Literature”. I try to discriminate between “Dietary Culture”, “Dietary Document”, “Dietary Writing” and “Dietary Literature”.
　　Secondly, I try to rebuilding the background of “Dietary Literature” of Taiwan in 1980’. Finding out what social conditions make food literature appear.
　　Thirdly, How the text be composed? I take may viewpoint on the “Genre of literature”. Finding out the factors of “Dietary Literature” and studying of the use of elements of language style, such as metaphor, in particular contexts.
　　I try to make some suggestions about the classifications of “Dietary Literature” in Taiwan, Investigating into the definition, classification and systematization.
