「便當」是許多臺灣人共同的生活記憶,為一個家庭飲食文化的縮影,呈現一種平凡、簡單卻充滿幸福滋味,記錄著家人共同享有的美好記憶,也是彼此傳遞感情的最佳管道。2018年5月衛福部國健署提出國人的每日飲食指南之外,亦提出適合國人的「我的餐盤,my plate」。提醒國人在每日的飲食中需要包含六大類食物,及各類食物的攝取量及其品質。期望藉由簡單的口訣幫助民眾記憶,並結合比例及份量圖像化,設計出屬於自己的餐盤。本研究以南臺灣高雄都會區立意取樣10家雞排便當,將其米飯、雞排、配菜逐一秤重,並依據事前已建立之雞排油炸粉、油炸油用量標準、青菜用油量標準,進行推估其生重與油重。將抽樣的雞排便當內含物與衛生署國健局所發布的「我的餐盤」口訣對比,然發現,市售雞排便當並未符合相關概要,本研究結果發現,市售雞排便當,在對於雞排烹煮所使用之油量皆高於100公克,至高最多使用多達317公克的油量烹煮雞排,雞排熱量可高達444.69大卡,至低熱量僅155.55大卡,由此可知,不同的商家所烹製之雞排便當營養成分皆有所不同。據此缺失,本研究重新依據衛生署國健局「我的餐盤」口訣設計符合標準又健康的「我的餐盤」,讓民眾聰明吃、營養跟著來。
"Bento" is a common life memory of many Taiwanese. It is the epitome of a family's food culture. It presents an ordinary, simple but full of happiness. It records the beautiful memories shared by the family and is also the best channel to pass on feelings to each other. In May 2018, the Ministry of Health and Welfare and the National Health Administration proposed a daily dietary guide for general population, and also proposed a "my plate" suitable for general population. Remind general population that they need to include six major types of food in their daily diet, as well as the intake and quality of various types of food. It is hoped that simple formulas will help the public to remember, and combine the proportions and portions of the images to design their own plates. In this study, the Kaohsiung metropolitan area in southern Taiwan intentionally sampled 10 chicken cutlet bento, weighed their rice, chicken cutlet, and side dishes one by one, and based on the established standards for chicken cutlet frying powder, frying oil dosage, and vegetable oil. It is estimated that its weight and oil weight are estimated. Comparing the contents of the sampled chicken breast lunch with the "My Plate" formula issued by the National Health Bureau of the Department of Health, it was found that the commercial chicken breast lunch did not meet the relevant summary. The results of this study found that the commercial chicken breast meal box, The amount of oil used for cooking chicken steaks is higher than 100 grams, and up to 317 grams of oil is used to cook chicken steaks. The heat of chicken steaks can be as high as 444.69 kcal, and the low-calorie is only 155.55 kcal. It can be seen that the nutritional content of chicken bento cooked by different businesses is different. Based on the lack, this study re-designed a healthy "My Plate" according to the "My Plate" formula of the National Health Bureau of the Department of Health, so that people can eat smartly and follow the nutrition.
