摘 要 本研究目的欲探討我國團膳教育者、團膳業雇主、供膳場所營養師三者對「供膳場所營養師工作職責之看法」,並調查目前供膳場所營養師工作現況。研究方法採自編式問卷。供膳場所營養師工作職責內容包含六大主題,共39小項。問卷共發給團膳教者育18位、團膳業雇主215位和供膳場所營養師232位。以SPSS軟體統計分析結果。問卷回收率為77.7%、15.8%和22.4%。研究結果:(1)團膳教育者、團膳公司雇主/主管、供膳場所營養師認為重要工作職責共有33 項;在六大項工作職責中,最重要的項目依序是:食物製備與供應之管理、營養與衛生安全教育推廣、客戶服務及產品行銷與開發、餐飲設備及財務管理、膳食設計與營養評估、部門組織及人事管理。供膳場所營養師認為最需加強項目為「餐飲設備及財務管理」。(2)供膳場所營養師工作現況調查方面:因工作年資不同,服務於團膳公司營養師平均月薪略低於公職營養師。團膳公司營養師在薪資、福利、工作成就感與公職營養師相較有偏低趨勢;有2成供膳場所營養師對工作成就感到滿意;對在校所學課程及目前公會、學會提供之在職教育課程大部分感到不滿意。本文且對教育者、雇主/主管、供膳場所營養師及營養學會公會分別提出建議。 關鍵字:工作職責、供膳場所營養師、團膳公司
Abstract The purpose of the study is to investigate perception of the quantity food educators, employers/mangers and foodservice dietitians to the foodservice dietitian’s responsibilities and current work situation of foodservice dietitian in Taiwan. A survey was conducted using a self-developed questionnaire. The questionnaire was mailed to quantity food educators (n=18), employers or mangers (n=215) and foodservice dietitians (n=232). Response rates are 14 (77.7%), 39 (15.8%) and 50 (22.4%). Data were analyzed by SPSS 10.0 for Window package software. The results are as following: 1. There are 6 major terms in 39 job responsibilities for foodservice dietitians were shown in this survey. The quantity food educators, employers/mangers and foodservice dietitians identified that 33 items are “very important” or “important”. The most important project is in order: Food preparation and supply management, promotion of nutrition and hygienic safe education, customer service and product marketing and development, dining equipment and financial control, menu design and nutrition assessment, department organization and human resourcesl management. The foodservice dietitians think that they need to improve the “dining equipment and the financial control”.2. The average salary of dietitians in quantity food companies is less than dietitians who work in public school. The dietitians in quantity food companies, their salary, benefit and job accomplishment seem have lower tendency then the dietitians in public school. Only 20% of foodservice dietitians feel satisfied with personal accomplishment. Most of foodservice dietitians feel unsatisfied with the foodservice management program at school and on-job training which was provided by Nutrition society & Dietitian Association. We also provide some recommendations for educators, employers/mangers, food service dietitians and. Nutrition society & Dietitian Association.
