由於都市農業的興起,台灣城市近幾年發展許多屋頂農園,期望達到田園城市的遠景,而屋頂農園推動初期,傾向於政府推動之教育與民眾自給自足,目前較少發展出結合商業性質運用的屋頂農園經營系統,而思考著經營屋頂農園後創造出的產銷一體模式,能為商業活動帶來的效益,甚至成為經營屋頂農園上的動力,或許將是屋頂農園另個發展方向。 文獻回顧為此論文的研究基礎,在文獻回顧章節中將會搜集、分析屋頂農園相關文獻研究資料,透過實驗在甜點店上打造屋頂農園,針對甜點店的商業模式經營屋頂農園做研擬,藉由體驗活動與問卷訪談等研究方式,從研究方發蒐集的相關資料中發現商業用途的屋頂農園面對的問題與創造出的價值。 藉由屋頂的規劃設計評估後,開始經營屋頂農園才能符合店家產品的需求量,而對於以往不停的原料供應鏈,經營者必須自行為屋頂農產品做品質把關與品質分類,當加工銷售端透過屋頂農園橫跨到原料供應端時本質上不外乎圍繞在質與量上,屋頂農園的商業價值中,內部營運價值: 減少食材成本支出、增加產品質量與賣相、行銷店家商譽、創造商業亮點。外部間接價值: 提升種植相關知識、結識相同理念客群、提升店家與周遭鄰里感情。
Due to the rise of urban agriculture, Taiwanese cities have developed many rooftop farms in recent years, hoping to achieve the vision of an idyllic city. In the initial stage of the promotion of rooftop farms, they tended to promote education and self-sufficiency by the people. At present, there are few developments that combine commercial applications. The roof farm management system, and thinking about the integrated production and marketing model created after operating the roof farm, the benefits that can be brought to commercial activities, and even become the driving force for the management of the roof farm, may be another development direction for the roof farm. Literature review is the research basis of this thesis. In the literature review chapter, we will collect and analyze the related literature research data of rooftop farms. Through experiments, we will build rooftop farms on dessert shops, and make research on the business model of dessert shops. Through research methods such as experience activities and questionnaire interviews, the problems and the value created by commercial rooftop farms were discovered from the relevant information collected by the researcher. After the planning and design assessment of the roof, the roof farm can meet the demand of the store’s products by starting to operate the roof farm. For the non-stop raw material supply chain in the past, the operator must do the quality control and quality classification for the roof agricultural products. When the roof farm spans to the raw material supply end, it is essentially nothing more than quality and quantity. Among the commercial value of the rooftop farm, the internal operating value: reducing the cost of food materials, increasing the quality and appearance of the products, marketing the goodwill of the store, and creating business highlights. External indirect value: Improve planting-related knowledge, meet customers with the same concept, and enhance the relationship between the store and the surrounding neighbors.
