以食物作為地景的呈現—以壯圍風土餐桌為例

壯圍鄉西側北側南側分別鄰接宜蘭市、礁溪鄉及五結鄉等重要觀光產業地區，但始終未受到這些地區的都市與觀光發展的明顯影響，一直維持著以農漁產業為主的地景環境特質。有別於以圖面、影像及文字等典型的環境特質表達媒介、本研究希望以著根於壯圍風土人文而產生的「食物」來作為壯圍地景特質的表達呈現。本研究根據實際參與一次「壯圍風土餐桌」的實驗行動以及一次「壯圍綠領人才培訓計畫」，釐清了在不同時期，基於當時當地的環境與生活狀態所發展出來的食物與地景的關係，並且運用食物來呈現壯圍地景的不同層面與脈絡。本研究結論以跳脫圖紙以「食」看待地景的承先啟後、關係的話語及流動、以「食」的滾動看見「跨」之間的融合與學習，以「食」來看待全球化與在地化之間的相互依存關係及作為地方的表示，更是具有再結構、再生產的過程，並進而影響地方的生活方式，以達到地方可持續性發展的可能性；不同專業者的注入風土餐桌對地景呈現的思維與檢討，提供未來景觀或空間設計相關領域除了透過空間圖紙媒介的思考之外，以不同媒介對地方可持續性發展的可能性。

Jhuangwei Township is adjacent to important tourist industry areas such as Yilan City, Jiaoxi Township, and Wujie Township on the west side, north side, and south side. However, it has not been affected by the development of cities and tourism in these areas. Different from the typical expression media of environmental characteristics such as drawings, images and texts, this research hopes to use "food" rooted in Zhuangwei's local customs and culture as the expression of Zhuangwei's landscape characteristics. Based on the actual participation in an experimental " Zhuangwei Terroir Dining Table " and a "Zhuangwei Green Collar Talent Training Program", this research clarified the food and landscape developed at different periods based on the local environment and living conditions at that time. It also uses food to present different levels and contexts of the Zhuangwei landscape. The conclusion is to jump off the blueprint to look at the inheritance of the landscape, the discourse and flow of relationships, to see the integration and learning between “cross” with the scroll of “food”, and to look at globalization and existence with “food” The interdependence between the localization and the expression of the place also has a process of restructuring and reproduction, which in turn affects the local lifestyle, so as to achieve the possibility of sustainable development of the place; Different professionals' implant the terroir dining table review and thinking on the representation of landscape ; Using "food" as representation of the landscape, it provides the possibility that the sustainable development of local can be developed in different media in addition to thinking through without drawings landscape or space design related fields in the future.
