在因應能源危機與全球暖化問題,如何能在有效的控制碳足跡之成本配置,並達到節能減碳之環保目的儼然已成為各企業規劃未來經營策略的重要課題。本研究主要以碳足跡作為研究核心,所探討之研究對象則為連鎖速食最具代表性之三項產品,透過連鎖速食業所廣泛分布的市場來傳達產品碳足跡的理念。 分析結果顯示,在含有食物里程之速食產品其存續期間依序為魚排=雞排>牛肉,但在無食物里程之速食產品其存續期間依序為魚排>雞排>牛肉,運送產品原物料之過程中所導致的碳排放就是造成差異的主要原因。本研究將其分析結果及結合連鎖速食業之碳足跡相關研究加以論述,期望提供給連鎖速食業者完善之減碳參考。
In response of the problem of energy crisis and global warming, how to control the cost of carbon footprint efficiency and achive the purpose of conserving energy had become an important concern of future management to enterprises. The reserch depends on the data of carbon footprint as the core of study. The object of the study is the most representive three products in the fast food chain. Through the broadly distribute of fast food chain in the market to convey the idea of carbon foodprint. The result shows, in the fast food products which had the food mile, the order of duration is fish steak = chicken> beef, and the order of the duration which do not have food mile is fish steak> chicken> beef. The main result of the difference are the carbon emission while delivery the raw materials of products. The study is going to discuss the results of analyze and combine with the carbon footprint of chain fast food industry hoping to provide a complete consult about carbon reduction to the industries.
