台灣食物銀行續食創新模式的實務研究 ~以雲林縣慶興基金會口福中央廚房為例

摘要


本研究是以「口福續食中央廚房為例」為創新實踐的經驗探討,以續食中央廚房處理續食的經驗及非營利組織經營「中央廚房」提供續食用於長青食堂共餐的這二項主題,以瞭解將這些食物鏈的前端農業大量耗損及賣相不佳或期限快到的食物可以更有效的利用的運作模式。 本研究採用質性研究,且藉由「文件分析」及「深度訪談」,呈現口福廚房的實踐經驗,以說明在籌備期及實施過程中的相關挑戰與因應之分析。研究結果發現,為了讓續食可以再利用,以創新模式續食中央廚房服務長青食堂,將續食連結到長青食堂不僅達成減少食物浪費同時配合政府長照2.0政策的供餐福利來照顧長輩,對於口湖偏鄉長輩的在地老化提供吃的資源,期待未來成為政府保護傘之外的另一種選擇,更將創新的做法擴散到全台灣。 根據研究目的與結論提出相關對於減少食物浪費、社區食堂與中央廚房之比較及長照2.0政策有關巷弄服務人員的反思及具體之建議。
