高職餐飲管理科輪調式建教合作實施成效研究

摘要


由於高職餐飲管理科輪調式建教合作面臨很多制度面上重大之變革,希望藉由本研究了解,高職餐飲管理科輪調式建教合作實施上是否能達到預期之成效,有那些問題急待解決,再依據研究結論提出建議,以供「教育主管機關」、「學校」、「實習店家」、及「後續研究」辦理高職餐飲管理科輪調式建教合作之參考。 本研究以台灣省高職餐飲管理科輪調式建教合作學生為研究母群,並以問卷調查法寄發2,324份問卷,回收有效問卷1,183份,有效問卷回收率為62.72%,本研究採用的統計方法,包括描述性統計、t考驗、單因子變異數分析、Scheffé 事後多重比較檢定分析等,根據統計分析結果,結論如下: 一、在「學校行政措施」、「學校課程規劃」、「學校教學實施」、「學校輔導措施」等由學校辦理的四個層面,都有傾向較高的辦理成效,「學校教學實施」層面得分最高,「學校輔導措施」層面得分最低。 二、在「技術生教育訓練」、「技術生工作環境」、「技術生輔導措施」、「技術生生活照顧」等由實習店家辦理的四個層面,都有傾向較高的辦理成效,「技術生工作環境」層面得分最高,「技術生生活照顧」層面得分最低。 三、在「學校行政措施」、「學校課程規劃」、「學校教學實施」與「學校輔導措施」等四個層面辦理的成效,因學校所在地、就讀年級等個人背景變項而有顯著差異,但在性別、實習店家所在地、實習店家類型及實習部門方面則無顯著差異。 四、在「技術生教育訓練」層面辦理的成效,因性別、學校所在地、就讀年級、實習店家所在地與實習部門等個人背景變項有顯著差異。 五、在「技術生工作環境」層面辦理的成效,因學校所在地、就讀年級與實習店家類型方面等個人背景變項有顯著差異。 六、在「技術生輔導措施」層面辦理的成效,因學校所在地、就讀年級等個人背景變項有顯著差異。 七、在「技術生生活照顧」層面辦理的成效,因學校所在地、就讀年級與實習店家所在地等個人背景變項有顯著差異。 本研究主要建議:(一)學校宜多重視高三學生滿意度偏低問題,積極找出解決問題之對策。(二)請企業單位重視技術生之「生活照顧」層面。(三)教育主管單位宜善盡督導之責。

The purpose of this study is to investigate the effectiveness of implementation of the rotary cooperative education in the food and beverage management department of vocational high school. Because of the rotary cooperative education have faced institution's change. Through this study, we want to be able to find those problems need to be solved. The effectiveness of implementation whether can achieve the desired results. According to the results of the study offered some suggestions to serve as reference information for the educational authorities, high school, company, and follow-up study. The population was the rotating cooperative education program students in food and beverage management of Taiwan provincial vocational high school. The research was conducted by questionnaire survey. The total number of questionnaires sent out was 2324, and the valid questionnaires were 1183. The validity rate was 62.72%. The analysis methods were descriptive statistic, t-test, One-way ANOVA, Scheffe’s posterior comparisons. The important results of this study are summarized as follow: 1. Its above average level in school’s effectiveness four dimensions including administrative support, curriculum planning, teaching activities, counseling. The teaching activities dimension gets the highest score, while counseling gets the lowest. 2. Its above average level in company’s effectiveness four dimensions including training, counseling, working environment, life care. The working environment dimension gets the highest score, while life care gets the lowest. 3. There is significant difference in administrative support, curriculum planning, teaching activities, and counseling of school’s effectiveness from different school’s location and grade of students. 4. There is significant difference in training dimension of company’s effectiveness from different gender, school’s location, grade, company’s location and working departments of students. 5. There is significant difference in working environment dimension of company’s effectiveness from different school’s location, grade and company’s type of students. 6. There is significant difference in counseling dimension of company’s effectiveness from different school’s location and grade of students. 7. There is significant difference in life care dimension of company’s effectiveness from different school’s location, grade and company’s location of students. This study has three major recommendations. First, schools should pay attention to the low satisfaction of senior students and find solutions to problems. Second, Cooperation Company to focus on life care dimension of internship students. Third, the educational authorities should to fulfill the responsibility of counseling supervision.
