食品公司投入餐飲業與赴大陸投資之績效影響

An Efficiency Study for the Taiwanese Listed Food Firms Investing in Mainland China and F&B

摘要

食品產業是維持民生生活的基本產業，除了提供國人營養與健康的來源外，食品產業在台灣經濟發展的過程中，扮演著重要的角色，但現有文獻卻極少論及有關食品業之績效評估。本研究利用兩階段資料包絡法分析2001年至2010年台灣上市(櫃)食品公司之經營績效，分別衡量食品公司之獲利效率值與市場效率值，再將食品公司分組，運用Mann-Whitney法檢定兩群體間的效率值是否有顯著差異，最後使用截斷式迴歸分析影響食品公司經營績效之原因，結果顯示赴大陸投資與未赴大陸投資的食品公司，兩組群體間的獲利效率和市場效率有顯著的差異；垂直投資下游餐飲業以及未投資下游餐飲業的獲利效率和市場效率也有顯著的差異。截斷式迴歸結果顯示，赴大陸投資食品公司對於公司的獲利效率有正向的顯著影響，但市場效率無顯著的影響，而垂直投資兩岸下游餐飲業對於獲利效率和市場效率皆有正向的顯著影響。因此，投資大陸及將觸角往下游餐飲業投資之食品公司相對的會直接影響獲利效率的提高，投資餐飲業還能提高食品公司的市場價值，赴大陸投資以及垂直整合食品相關產業可為台灣食品經營業者主要思考的方向，供食品相關經營者作決策參考，未來研究也可擴及其他產業，具備完善的投資規劃後，可鼓勵投資與企業有垂直相關下游產業，提升公司績效，以創造雙贏。

Food industry maintains the livelihood of people, besides providing nutrition and health, food industry plays the important role in Taiwan, but seldom empirically studied for the efficiency measurement. Firstly, this research uses two-stage Data Envelopment Analysis (DEA) to measure the profitability efficiency and marketability efficiency for Taiwanese listed food firms from 2001 to 2010.
Secondly, the paper uses Mann-Whitney test to compare the efficiency differences between two groups, and utilizes the truncated regression to investigate the determinants of efficiency. The empirical result shows that the food companies investment in mainland China have the significantly positive impact on profitability efficiency and marketability efficiency , investment in the restaurant industry have the significantly positive impact on marketability efficiency ,but insignificantly positive on profitability efficiency. These empirical results could offer the food managers for further improvement on investment to create win-win situation.
