台北市國中生食農教育認知對其早餐選擇行為之研究

摘要


食農教育非常重要,但關於國中生食農教育相關之研究卻十分有限,而國中階段的青少年正處於飲食價值觀建立的關鍵時期,若要提升國人有關食農教育的意識,國中是極為重要的階段。本研究主要目的在了解台北市國中生的食農教育認知情形、早餐選擇行為並探討兩者之間的相關性。研究選擇台北市國中生作為研究對象,探討受試者個人背景變項與食農教育認知、早餐選擇行為之相關性,以及台北市國中生的食農教育認知情形、早餐選擇行為以及兩者之間的相關性,並探討外在因素對早餐選擇行為之相關性。 本研究採量化的研究方法,運用自編問卷為研究工具。在樣本資料收集上,以分層隨機抽樣方式,在台北市十二個區中抽取八年級學生進行問卷發放與施測,總計回收有效樣本數為893份。所得資料以描述性統計、獨立樣本 t 檢定、單因子變異數分析、雪費法事後分析、卡方分析進行資料分析。 研究結果發現台北市國中生整體食農教育認知得分表現屬「良好」,有吃早餐習慣的學生佔多數,欠食情況並不嚴重。無論早餐為外食或家中準備,在內容上皆以「麵食」為主。而在不同背景變項分析上,發現「父、母親學歷」與食農教育認知得分、選擇早餐形式(米、麵食)達顯著差異;另外,也發現食農教育認知得分與早餐習慣(有吃早餐、欠食)相關,與選擇早餐形式(米、麵食)則無顯著相關。

The promotion of Food and Farming Education is important for junior high school students in Taiwan, and adolescents in the critical period are experiencing the important phase to build their values in eating habits. Therefore it’s very crucial to improve people’s awareness of Food and Farming Education. This research is mainly aimed to investigate the cognition on Food and Farming Education, the breakfast behavior and the correlation among two mentioned dimensions of the junior high school students in Taipei City. The variable of the participant’s background and correlations between the external factors and the breakfast behavior are also analyzed. This study is based on the questionnaire concerned about the cognition on Food and Farming Education and the breakfast behavior which are designed in this quantitative study. Stratified random sampling is used to collect the data of the eighth-graders from 12 districts of Taipei City. Finally, 893 valid questionnaires were collected and SPSS Statistics software was used to implement descriptive statistics, independent-sample t test, one way ANOVA, Scheffé's method, and Pearson's chi-squared test. The results indicated that the junior high school students in Taipei City had fair scores of cognition on Food and Farming Education. It’s not serious about “No Eating Breakfast” because most of the students had the habit of eating breakfast. No matter homemade or take-out, most of the food was made from wheat. The finding also showed that there were significant difference among the cognition on Food and Farming Education, the breakfast behavior and respondents’ variables, including parent’s education background. Furthermore, there was significant correlation between the scores of cognition on Food and Farming Education and eating habits, but no significant correlation between the scores of cognition on Food and Farming Education and Food composition.
