採後處理對台灣山蘇品質之影響

The Effect of Postharvest Treatment on the Quality

摘要


本研究係針對屏東縣獅子鄉所栽種之台灣山蘇(Asplenium nidus L.)亦稱為鳥巢蕨(Bird nest fern)為材料,探討山蘇採後生理、包裝(紙箱包裝、紙箱加PE袋包裝及未包裝)、藥劑處理(1-MCP、ClO2及H2O)及貯藏溫度(5℃、15℃及25℃)對山蘇品質及褐化之影響。結果顯示,呼吸率隨貯藏溫度提高而增加,但貯藏期間,呼吸率及乙烯產生率皆無更年上升之現象,屬非更年性(non-climacteric partterns)。不同貯藏溫度、包裝及藥劑處理對山蘇含水量、乾物重、可滴定酸及pH值影響不大,但以紙箱加PE袋包裝之失重率最小。而不同溫度貯藏下,山蘇之維生素C含量、葉綠素含量、電解質滲漏、多酚氧化酶(PPO)及過氧化酶(POD)活性,以5℃貯藏下,維生素含量及葉綠素含量之損失最小,電解質滲漏、PPO及POD活性亦最低。就經濟成本而言,山蘇貯藏於5℃搭配紙箱包裝有較長之貯藏壽命及品質較佳。

Postharvest physiology of bird nest fern (Asplenium nidus L.) collected from Shihzih Township, Pingtung County, were studied. Effects of postharvest treatments on the quality and browning of bird nest fern, including postharvest physiology, packaging (corrugated box, corrugated box with polyenhtlene (PE) bag and naked), chemical treatments (1-MCP, ClO2 and H2O), and storage temperature (5℃,15℃and 25℃) were conducted. The result showed that respiration of bird nest fern increased with storage temperature, and during storage, there were no appearance of clearly climacteric respiration and ethylene peak; instead, the bird-nest fern exhibited non-climacteric patterns. Different storage temperatures, packaging treatments, and chemical treatments did not significantly affect on water content, dry weight, titratable acidity, and pH value of bird nest fern. However, packaging of corrugated box with PE bag showed the smallest rate of weight loss. Under different storage temperatures, vitamin C content, chlorophyll content, electrolyte leakage, and activity of polyphenol oxidase (PPO) and peroxidase (POD) of bird nest fern. At 5 ℃, the smallest losses in vitamin C content and chlorophyll contents, and the lowest electrolyte leakage, PPO and POD activities were observed. Economically, the adaptive temperature (5 ℃) with corrugated box had the longest storage life and better quality.
