連鎖便當店經營成功關鍵因素的探討-以高雄某連鎖便當店為例

摘要


隨著整體經濟環境及餐飲業的蓬勃發展,並且受到環境經濟、家庭人口組成結構、社會型態、消費習慣以及飲食習慣等不同因素影響,使得台灣單身人口、小家庭、婦女就業人口逐漸攀升,如此也造成台灣人外食比例增加,更造就了餐飲業蓬勃發展,致使各個品牌創新與開發能力都越來越令人驚艷,也造就了諸多連鎖餐飲品牌的蓬勃發展,因此本研究既以連鎖便當業為題,探討其主要成功關鍵因素,以作為本研究主要探討之範疇。 根據研究結果發現連鎖便當店的經營成功關鍵因素在於市場競爭致使提升其產品的研發,並且透過進貨方式及食材選購以強化其產品的品質及透過SOP達到產品品質一致性,最後對於營運方面則是透過人力的統一培訓,並且強化財務控管,以達到其營運的正常化,而在店鋪選擇上也需配合能見度、店舖位置、目標客群偏好、消費習慣及停車空間,這些都是成為連鎖便當店主要能夠屹立市場的主要關鍵因素。

With the development of the economic environment, and the impact of different factors such as the environmental economy, the composition of the family population, social patterns, consumption habits, and dietary habits, the single population, small families, and women employed in Taiwan have gradually increased. This has also led to an increase in the proportion of Taiwanese people eating outside, which has led to the vigorous development of the catering industry and the vigorous development of many chain catering brands. Therefore, this study uses the takeaway chain store as the topic to explore its key success factors as the main research. According to the research results, it is found that the key factor for the success of takeaway chain store is that market competition has led to the improvement of its product research and development, and the strengthening of the quality of its products through the purchase method and selection of ingredients, and the consistency of product quality through SOP. Finally, in terms of operations, it is through unified training of manpower and strengthened financial control to achieve the normalization of its operations. The choice of stores also needs to be matched with visibility, store location, target customer group preferences, consumption habits and parking space. These are the main key factors to become the takeaway chain store.
