高職餐飲科學生中餐烹調技能檢定成效對學習行為影響之研究以T高中為例

摘要


本研究以高職餐飲學生參加中餐烹調技能檢定成效對學習行為影響為主題,旨在確認參加中餐烹調技能檢定成效對於學生學習動機學習態度及學習環境三個層面間的影響與關係。本研究透過問卷調查方式,針對大台中地區T高中餐飲科二、三年級學生作為調查對象,了解中餐烹調技能檢定成效對學生學習行為的影響,除此之外,本研究也針對學生個人背景變項對學生學習行為之差異及學生個人背景變項對中餐烹調技能檢定成效間關聯性作深入探討。研究結果發現:在學習動機上,學生最能認同通過中餐烹調技能檢定有助於專業技能的提升,對未來的升學與就業有所助益;在學習態度上,學生認為因參加中餐烹調檢定會對於課程的學習更加認真;而在學習環境上,學生則認同學校應提供必要的設備以供練習及老師上課會講解及示範術科操作方法及注意事項,鼓勵學生參與檢定及給予鼓勵。

The purpose of this study is to find out what influences does Chinese Cuisine Cookery Test results have on vocational school students’ learning behaviors. The aim is to confirm the influences and relationships of Chinese Cuisine Cookery Test results with respect to students’ learning motivation, attitude, and environment. This study took the second and third year students majoring food and beverage studies from the T high school in the Greater Taichung area as participants and surveyed them with a questionnaire intending to understand the influences of Chinese Cuisine Cookery Test results on vocational school students’ learning behaviors. The results shows, with respect to learning motivation, that students agree on passing the Chinese Cuisine Cookery Test would enhance their professional skills and is beneficial for their future studies and employment seeking. Students’ attitude towards course learning would also become more positively endeavoring due to taking the Chinese Cuisine Cookery Test. With regard to learning environment, students agree that the school should provide necessary facilities and equipment for practicing. The teachers must lecture as well as demonstrate operational techniques, mention safety precautions, and give students constant encouragements for taking the test.
