發展出一個包括生長,水份變化及乾物重量消失的數學模式以描述Rhizopus oligosporus在固態醱酵的情形。此模式用以估計生長的階段。直接積分(direct integration)或Kalman filtering approach此二不同數學方法,被運用於比較實驗結果。此二種方法所得合理性地與實驗結果相同。旋轉式反應槽被運用,以求得單一化及可控制的實驗系統。比較有控制與沒有控制的操作。藉水分蒸發以控制基質的溫度,而添加水分以補充損失的水分。溫度及水分必須同時控制在所定的條件。結果顯示有控制的系統,其蛋白增強較沒控制爲多。

A model including cell growth, content variation and total weight loss of dry matter was developed for the solid state fermentation of Rhizopus oligosporus. This model was used to estimate the state. Two different methods, direct integration of equations and a kalman filtering approach, were compared with experimental values. Both kalman filtering and the direct integration method showed reasonable agreement with experimental results. A rotational reactor was invented to give uniformity and controllability for the experimental System. A controlled run was compared with an uncontrolled run. Water evaporation was used to control the temperature of the substrate with compensation of water loss by adding water. Temperature and water content could be controlled simultaneously at desired values. The controlled urn showed better protein enrichment than the uncontrolled run.
