石蓮茶包浸泡液抗氧化功效探討

Antioxidative Activities of Various Water Extracts of Shi-lan (Graptopetalum Paragnayens) Tea Bag

摘要


由於易保存與方便使用,石蓮茶包產品在市面已有一定數量的市場需求。本實驗探討石蓮新鮮葉體經熱風乾燥或冷凍乾燥後製成粉體,其冷水、熱水萃取液,共4種樣品其抗氧化活性的變化,藉以瞭解乾燥方式與浸泡方法對石蓮抗氧化活性間之差異,以作為浸漬茶包加工時的參考。本研究結果顯示,熱風乾燥及冷凍乾燥之各式萃取液中其總酚及類黃酮含量差異不大,且兩者在DPPH自由基清除能力、還原力、清除超氧陰離子能力、及亞鐵離子螫合能力表現類似。此外由實驗數據分析發現,還原力與試樣中總酚含量相關性最高,而DPPH自由基清除能力與總酚含量的相關性最低,推測石蓮的DPPH自由基清除能力可能與總酚之外的物質相互影響。並建議如以經濟與抗氧化性需求考量,建議石蓮可用較經濟的40℃熱風乾燥72小時,取代用高成本冷凍乾燥製作石蓮乾燥茶包。

Due to their long-term storage and convenience, products of Shi-lan (Graptopetalum Paraguayens) tea bags have been demanded for the market. This research studied the antioxidative activities of water extracts of dried Shi-lan which were processed by freeze drying or hot air drying. Antioxidative activities of hot or cool water-extracted solutions of dried shi-lan were investigated in order to understand which exhibited the best antioxidative activities. The results indicated that there was no obvious antioxidative activity differences between the hot-air dried and the freeze dried shi-lan. In view of lower cost and antioxidative preservation, the dried shi-lan powder may be produced by hot air drying under 40℃ for 72 hours.
