2017臺北世界大學運動會餐飲服務與臺灣飲食發展研究

The Development of Catering Service and Taiwanese Local Cuisine in 2017 Summer Universiade

摘要


2017年臺北世界大學運動會是臺灣歷年舉辦最大型的國際賽會,在賽會平臺的國際交流中,臺灣具有特色的飲食文化應該也是重要的一環。研究目的在探討此次賽會的餐飲運作,結合臺菜發展的分析整理,期望國人未來舉辦國際賽會能發揚在地美食文化的參考。本研究為透過相關文獻蒐集,和研究者在選手村飲食部門擔任志工的田野觀察,進行歸納分析。研究結果顯示國際賽會餐飲美食能促進國際交流,同時考驗當地團膳的行政管理能力,整合臺灣飲食發展的歷史、地理區位與創新發展,呈現值得持續發揚的特色,進而透過餐飲美食達到無國界的交流。台灣要辦理國際賽會誠屬不易,但如何透過大型的國際賽會將臺灣美食規劃在賽會的餐飲服務中,是未來努力的技術重點。

The worldwide Summer Universiade was held in Taipei in 2017. Taiwanese local cuisine played an important role in developing international interaction among athletes by exposing them to Taiwanese food culture at the athlete village. The purpose of the study was to investigate the preparation and operation of Taiwanese catering service for future consideration and devotion in organizing international competitions and games. According to the researcher's volunteering experience at the catering department field investigation and literature analysis were implemented for data collection and inference by induction. The results indicated that providing luscious food promotes international interaction and improves the executive team of provision ability for enhancing and glorifying Taiwanese food culture, history, and innovative promotion.
