隨著全球暖化的速度及程度越來越嚴重，極端氣候帶來的災害與造成對人類文明的威脅也越來越大，如何在經濟發展的同時兼顧生態環境的保護與物種的保育，儼然成為本世紀人類最重要的課題。教育部推動環境教育已行之多年，而108課綱中也一再強調環境教育議題應融入課程中，以培養學生具備足夠的知識與能力來面對未來暖化對人類的挑戰。有鑑於此，本研究旨在探討國中生全球暖化、低碳飲食知識與低碳飲食行為意向之關係，研究目的在於探討國中生全球暖化、低碳飲食知識與低碳飲食行為意向之情況；不同個人背景變項的國中生在全球暖化、低碳飲食知識與低碳飲食行為意向是否具有差異情形；國中生全球暖化、低碳飲食知識與低碳飲食行為意向的相關情形；國中生全球暖化、低碳飲食知識與低碳飲食行為意向的預測力。本研究以埔里鎮大成、宏仁及埔里三所國中的學生為研究對象，採取分層群集抽樣，共發放380份正式問卷，回收376份，問卷回收率為89.5%，針對問卷調查所得結果，以SPSS 23.0統計軟體進行描述性統計、獨立樣本t檢定、單因子變異數分析、皮爾森積差相關與多元迴歸分析等統計分析之。 本研究所獲得之結論分述如下： 一、國中生對於全球暖化知識具有中等以上之認知。 二、國中生對於低碳飲食知識具有中等以上之認知。 三、國中生在低碳飲食行為意向上有中等之表現。 四、國中生在全球暖化知識上會因年級與父親教育程度而有顯著差異。 五、國中生在低碳飲食知識上會因年級與父親教育程度而有顯著差異。 六、國中生在低碳飲食行為意向上會因性別、父親教育程度以及母親教育程度而有顯著差異。 七、國中生全球暖化、低碳飲食知識與低碳飲食行為意向均達顯著正相關。 八、國中生之全球暖化知識對低碳飲食行為意向具有預測力，但七年級對低碳飲食行為意向的預測力更高。
