Investigation of Antioxidant in Breakfast Cereals

The contents of antioxidant in breakfast cereals were investigated. One hundred and fifyt samples of chips (85), wheats (16), instant cereal drinks (22), powders (15) and other types of sample (12) were analyzed according to the official methods. Thirty-one chips, one wheats, one instant cereal drinks and two powder samples were found to contain BHT. one chip sample had BHA while two chip samples had both BHA and BHT. All samples found with antioxidants were below the tolerance level. Among them, twenty-seven samples did not meet the label requirement.
