The effect of drying temperature on sorption isotherms of peanuts were studied in this research. The best fitting agreement models and its parameters were evaluated by nonlinear regression analysis. The experimental results indicate that the drying temperatures have the significant effect on the sorption properties of peanuts. The higher the drying temperature is, the lower the water holding capacity at the same RH value is. It is necessary to consider the grain history for the comparison of EMC/ERH properties that effecting by varieties or determinaing methods. The effect of drying temperatures should be considered in developing moisture content recommendations for safe stor-age and other's processing works.
