洋刀豆與大刀豆中尿素酶含量之研究
Study on the Urease Content of Jack Bean and Sword Bean
摘要
洋刀豆為一年生、直立性豆科植物，易於栽培管理，本省所產洋刀豆的尿素酶含量豐富，可作為工業生產時之酵素源。大刀豆的尿素酶含量接近洋刀豆，但是不易栽培管理。洋刀豆種子的尿素酶幾乎完全集中在子葉中，含量隨種子之發育而增加，直到成熟後不再變化。在成熟後沒有碰到雨季，其採收不受時間限制。

Jack bean(Canavalia ensiformis DC), an erect annual legume, grew well in Taiwan. The mature seeds contained enough quantity of urease for commercial extraction and purification. Jack bean was easier to be cultivated and handled than Sword bean. Urease existed mainly in the cotyledons of Jack bean and its content increased with enlargement of cotyledons until maturation. Jack bean seeds could be harvested at any time after maturation.
