市售素食食品人工著色劑及漂白劑含量測定

Quantification of Artificial Colorants and Bleaching Agents in Vegetarian Foods of Taiwan

摘要


人工著色劑與漂白劑常被添加於各種食品中,以增加對消費者的吸引力,可是過量的人工著色劑與漂白劑會對人體健康產生不良影響。素食食品的消費在最近幾年有上升的趨勢,由於多數素食食品均具有鮮豔或潔白的顏色,因此本計劃針對市售素食食品所含的人工著色劑和漂白劑進行定量,以提高這些產品的安全性。檢驗結果顯示,在人工著色劑方面,所抽樣的九件素食食品中,有七件添加了酸性煤焦著色劑,其中更有三件檢驗出非法定著色劑紅色2號及紅色104號,不過所含的人工著色劑含量並不高,僅有三件檢出含藍色2號超過100ppm。在漂白劑方面,29件樣品中只有亞硫酸靈被檢出,並未發現有使用過氧化氫及過氯酸鹽,且濃度也符合法規中所限制的300ppm以下,故就漂白劑而言,所有的抽樣樣品皆為合法的產品。

Artificial colorants and bleaching agents are aften incorporated into foods to attract consumers. However, the presence of these additives in excess in foods can be harmful to human health. The consumption of vegetarian foods has been increasing steadily in recent years. As most vegetarian foods sold in the market possess bright or white color, the possibility of presence of artificial colorants and bleaching agents in these foods has to be investigated. Results showed that seven of nine samples investigated were found to contain acidic coal tar dyes. Of the seven samples, three was found to contain FD & C Red No.2 and Red No. 104. However, these colorants were present in small amounts. Only three samples were found to contain FD & C Blue No.2 with a concentration over 100ppm. For bleaching agents, only sulfite salt was found at a concentration below safety standard (300ppm). No hydrogen peroxide and perchlorate salt were found in 29 samples.
