蛋白質的來源與含量對大白鼠組織中脂肪酸組成的影響

飲食蛋白質在人類及實驗動物的血漿膽固醇濃度調節上居重要地位。本研究目的在探討飲食中不同蛋白質來源(酪蛋白和大豆蛋白)與含量對大白鼠血漿、肝臟、血小板及主動脉中脂肪酸組成的影響。實驗採用48隻離乳的雄性Wistar大白鼠,分為六組,分別餵食低蛋白(10%)、適量蛋白(20%)及高蛋白(30%)含量的酪蛋白和大豆蛋白四週。與酪蛋白比較,大豆蛋白會降低血漿中花生四烯酸的含量,但會有較高的肝臟亞麻油酸含量,因而肝臟中(20:3+20:4)/l8:2比值較低。此外,隨蛋白質含量的增加,肝臟中亞麻油酸的量也增加。又,大豆蛋白飲食的大白鼠其血小板之亞麻油酸含量較酪蛋白者高,而主動脉之20:4(n-6)較少。這些結果顯示,飼料中不同的蛋白質來源與含量均可能影響大白鼠組織中脂肪酸的組成。

Dietary protein plays an important role in the regulation of the plasma cholesterol level in human and experimental animals. The present study investigated the effect of different types (casein and soy protein) and levels of dietary protein on fatty acid composition of various tissue in rats. Forty-eight male weanling Wistar rats were divided into 6 groups and were fed diets with three levels (10, 20 and 30%) of protein from two sources (soy protein or casein) for 4 weeks. Soy protein (20 and 30%) group had lower plasma arachidonic acid than that of casein group. The linoleic acid level in livers of rats fed soy protein diet was higher than in those fed casein diet. In addition, the fatty acid ratio of (20:3+20:4)/18:2 in liver were lower in soy protein group. The liver linoleic acid tended to increase with increasing amount of casein and soy protein level. Soy protein diet increased 18:2(n-6) of platelet fatty acid and decreased 20:4(n-6) of arota when compared to casein diet. The results suggest that both types and levels of protein would alter fatty acid composition of rat tissues.
