本研究之目的是以一般消費者到餐廳中用餐時,所能觀察到的服務人員及環境衛生為主要觀察內容,以暸解臺灣南部地區某市中式餐廳之衛生管理現況,將餐廳中用餐區域之衛生管理分成「菜式品質」、「服務人員衛生習慣」、「餐具衛生」、「環境衛生」等四項,利用隨機抽樣的方式抽出20家餐廳為本研究之樣本,評量方法分成「非常良好」、「有點良好」、「有點不良」、「非常不良」等4級,結果顯示中式餐廳所提供菜式品質之評量等級大都在「有點良好」以上,但是在服務人員衛生習慣、餐具衛生及環境衛生等方面之評量等級則介於「有點良好」與「有點不良」之間,最後根據研究結果提出加強餐廳衛生稽查及消費者教育宣導之若干建議。
The purpose of this research is to analyze the sanitation of Chinese style restaurants from consumers' point of view. Data were obtained from a random sampling of 20 restaurants rate from 1-very poor to 4-excellent. The result shows the quality of food items have been rated at 3 points-good while 「Personal Hygiene」、「Serving Cutleries」 and 「Environment」 were rated between points 2-poor and 3-good. Based on this research following suggestions are being made to improve these restaurants as well as to enforce the education for consumer's rights.
