臺灣南部地區某市中式筵席餐廳衛生品質管制評估研究

The Assessment of Sanitation Control for Chinese Feast Style Restaurants in a Certain City of Southern Taiwan

摘要


本研究之目的在於評估臺灣南部地區中式筵席餐廳之衛生品質管制實施現況。樣本取自臺灣南部地區某市有能力辦理中式筵席且供餐能力達20桌以上之中式餐廳,計25家餐廳為本研究之施測對象。利用行政院衛生署所訂之「供應團體膳食衛生管理自行檢查表」評估,並以描述性統計及推論統計進行資料分析。結果顯示:中式筵席餐廳之整體衛生情況屬於普通,其中以食物處理方面之得分較高。有指定專門人員負責衛生管理及督導工作的餐廳,其「食物前處理」及「用餐衛生」的分數,顯著優於未指定專人負責的餐廳。有實施樣品抽存的餐廳,其「用餐衛生」的得分顯著優於未實施樣品抽存的餐廳。餐廳中用餐場所之衛生情況,可以預測餐廳整體的衛生管理情形。最後根據研究結果,提出若干建議。

The purpose of this study was to assess the quality control of sanitation in Chinese feast style restaurants. Data were obtained from a sampling of 25 restaurants which were capable of serving 20 tables or more. Using a self-inspection sanitation control check list (established by government regulations to avoid food poisoning outbreaks), the sanitation status and quality control was assessed. Survey data were analyzed using descriptive and inferential statistics. The overall sanitation of the sampled Chinese restaurants was rated “average”, with food preparation” having the highest scores. Restaurants with a specialist in sanitation got higher scores on both “food pretreatment” and “meal sanitation” than those without a sanitation specialist. Restaurants undergoing random sampling from meals for surveillance purposes got higher scores on “meal sanitation” than those without random meal sampling. The overall sanitation of the sampled restaurants can be predicted by the “meal sanitation” scores. Suggestions were made based on these results in order to improve sanitation for these restaurants.
